A Bite Of Bourbon - Maker’s Mark Maple Peach Pie With Browned Butter Pecan Streusel

Single-serve desserts are a favorite of mine to serve, especially for something so rich. But certainly for Wheelys, small is the way to go.

The recipe here is for a regular 9” pie, but you can break it up into mini pies as I did - the cook time is still the same.

Ingredients For The Filling:

3 lbs ripe peaches, about 6 or7

2 tablespoons cornstarch or tapioca starch

1 ½ tablespoons flour

2 teaspoons pumpkin pie spice

¼ tsp salt

Pinch of allspice

3/4 cup sugar, half brown

¼ cup maple syrup

4 tablespoons of your favorite bourbon

3 tablespoons butter

Ingredients For The Streusel:

1/2 cup chopped pecans, toasted for 5 minutes in a 350 degree oven

1/2 cup (1 stick) butter

1 cup plus 2 tablespoons flour

3/4 cup sugar, half brown

¼ teaspoon salt

1 teaspoon cinnamon

METHOD

Start with your favorite pie crust recipe or pre-made crust. If I don’t make it homemade, I use Pillsbury AllReady Crusts, which I think are superior to many others.

Peel and slice the peaches, and then toss in a large bowl with the cornstarch, flour, cinnamon, salt, and allspice.

Preheat oven to 425.

In a heavy-bottomed saucepan over medium-high heat, combine the filling ingredients and cook on low until the butter is melted and there’s no graininess left in the liquid. Let cool.

Cool the butter in a saucepan until it starts to brown slightly. Remove from heat and let cool slightly.

Using a pastry cutter or two knives, mix the dry ingredients of the streusel. Drizzle the butter into the streusel and mix again until crumbly. Spread the streusel mixture on a sheet pan and refrigerate about 15 minutes to harden up a little.

Fill the pie shell with the filling then crumble the topping over it. Make sure to put a baking sheet or pie drip catcher underneath, as it WILL bubble over and make a mess! Cover with foil and cook for 15 minutes.

Remove the foil, reduce heat to 350, and cook for an additional 30-40 minutes. The crust should be golden brown and the caramel should bubble when the pie is ready.

Cool for at least 3 hours. If you don;t wait the three hours, the pie won’t set up enough.. Slice and serve with vanilla ice cream or whipped cream.
