PPPPPP (Proper Planning Prevents Piss-Poor Performance)Breakfast Cups

I went to a Tony Robbins seminar years ago, where I was told that being busy was my addiction. I suppose it’s true - I keep myself pretty busy most of the time and usually like it that way.

But there are definitely times when I feel overwhelmed and can’t seem to keep up with the simplest tasks. So breakfast on the run or in a hurry works out pretty well for me. Every couple of weeks, I make a batch of breakfast “muffins” that are easy to eat quickly or take a long with me in the car. But these are my favorite.


INGREDIENTS

8 Eggs

1 onion, diced

1 cup spinach leaves chopped

1/2-3/4 cup grape tomatoes *

1 or 2 garlic cloves, minced

½ cup cheddar cheese or Parmesan, grated

Olive oil

Cooking Spray or muffin liners

Salt & pepper

Herbs of your choice (I used basil and parsley this time), chopped

METHOD

Preheat oven to 425 degrees F.

Spray cupcake pan with cooking spray or line it with foil or paper muffin cups.

In about a teaspoon of oil, cook the onion and garlic on medium until the onions are translucent. Add the spinach and let it wilt. Remove from heat.

Place veggies in the bottom of each cupcake mold in pan. Top with the cheese.

In a small bowl, whisk together the eggs, add a pinch or two of salt and pepper.

Add your herbs.

Pour whisked eggs into each cupcake mold on pan, filling about 2/3 way full.

Add a tomato or two to each cup. You could chop them, but I like finding that squirting little tomato when I bite into the muffin.

Bake in oven for 10-12 minutes, until egg has set. If using mini muffin pan, reduce cooking time by about 5-8 minutes.

Allow to cool slightly before removing from muffin pan

To reheat, simply zap in the microwave for about 15-20 seconds. If you’re not on the run, add a little Sriracha hot sauce to wake you up. Tabasco is fine, but there are so many great hot sauces and chili sauces out there, it’s fun to experiment.

This is one of those simple, homey recipes that you can play with. Try different combinations instead of spinach and tomato:

Ham and cheese

Bacon and jalapeno

Zucchini and sausage

...or whatever you have in the fridge.

Then grab your briefcase and go - eat them cold in the car, you’re going to be late.
