An Ounce Of Pretention - Holiday Broccoli Cauliflower Casserole

As someone who’s been trying to hone my cooking skills over many years, it can be tough sometimes to make those old family favorites that start with “a box of this” or “a can of that.”But truth be told, this dish that my mother used to make for holiday dinners (and she was a heinous cook, God love her), is still the most requested dish from me at Christmas and Thanksgiving. And that’s because it’s flat out delicious. There are never leftovers, no matter how much I make.

So I put my culinary pretention aside and made this dish for those I love.


INGREDIENTS

1 head cauliflower

1 large bunch of broccoli

2 cans cream of mushroom soup

1 cup milk

1.5 cups Cheddar Cheese, shredded

2 cup Bisquick baking mix

1/2 cup butter


METHOD

Steam veggies until tender. Drain. Place them in a lightly greased 3 quart wide (not deep) casserole dish.

Thoroughly mix soup and milk until smooth; pour over veggies. Mix in 1 cup of the cheese.

Mix baking mix and butter with two knives or a pastry cutter until crumbly; cut in the last 1/2 cup of cheese. Bake at 450° until crumbs are light brown, about 20-30 minutes.

Try this once time, and I know you’ll be making memories with it for many years to come.
