Since cooking has become a passion of mine, I’ve usually turned my nose up at recipes I’m given that “start with a box of,” or “start with a can of.” This one might have changed my mind. I had unexpected company and had to make a really quick dessert. And it starts with both a can and a box.
INGREDIENTS
1 17.5oz. package snickerdoodle cookie mix
1/2 cup 1 stick salted butter
1 large egg
1 21oz. can apple pie filling
3 Tbsp. caramel topping plus more for drizzling
2 teaspoons cinnamon sugar*
METHOD
Preheat oven to 375F and spray an 8” baking dish with non-stick cooking spray.
In a small bowl, mix together cookie mix, butter, and egg.
Place half of the dough in small spoonfuls across the bottom of the prepared baking dish, making sure it doesn’t clump too thickly in any one area.
Sprinkle dough with 1 teaspoon of cinnamon sugar. *The snickerdoodle mix has a little packet of this included in the box.
Spread apple pie filling over the bottom layer and add remaining cookie mix in small spoonfuls across the top.
Sprinkle with the second teaspoon of cinnamon sugar and top with a drizzle of caramel topping. (Toss the rest of the sugar packet unless you’d like it on toast later.)
Bake for 30 to 35 minutes.
Top with a spoonful of ice cream and drizzle some more caramel on top.
Buy two of each ingredient - you’ll want to make this again.
